Acorn Squash with Cabbage & Curry

What you need:

  • 1 acorn squash, wedged
  • ¼-½ cabbage, thinly sliced
  • 1 apple, match-sticked
  • Raisins
  • ½ tsp curry powder
  • ¼ tsp ground ginger, or fresh
  • 1 tsp dijon mustard
  • 3 tbsp apple cider vinegar
  • Sunflower Oil
  • Salt + Pepper

Preheat oven to 400 F

On a sheet pan, toss squash slices with oil and salt + pepper. Spread into one layer and cook for 20 minutes or so until tender. Turn halfway through, let cool.

Make dressing by combining spices, mustard, vinegar and sunflower oil. Season to taste. 

Toss the cabbage, apples, raisins with half of the dressing. Then add the acorn squash and gently toss to coat. Try not to break the squash slices. Top with sliced olives or nuts for variety.
