Serves 2-3 as main dish
What you need:
- 1 butterhead lettuce
- 4 chicken sausages, I like our Spinach & Feta
- 1 cups mushrooms, diced
- 1 cups leeks, or other onion
- Fresh herbs
- Salt + Pepper
First, get all the filling out of the sausage casing. (You can also chop it into small pieces instead.) In a skillet over medium high, begin to caramelize the leeks or onions. Once they become translucent, about 5 minutes, add in the sausage and cook. Once the chicken begins to brown, add in the mushrooms and fresh herb. I like thyme for this dish, your choice! Season to taste.
Meanwhile wash your head of lettuce. Pull off each leaf, these will become your cups then palace on a serving platter. When the filling has browned nicely and the chicken is cooked, spoon filling into a serving bowl.
This is an interactive dinner! Serve the lettuce cups and fall filing separately…or you’ll get soggy cups. This dinner is fun for the whole family.
