Delicata, Kale, And Farro Salad

Such a great salad for lunch on the go!

What you need:

  • 1-2 Delicata Squash
  • Half a  bunch of kale
  • 2 cups cooked farro cooled, or other grain
  • Sweet Curry Powder
  • Dash of Apple Cider Vinegar
  • Salt + Pepper
  • Oil, I prefer Sunflower for this

Preheat oven to 425 F. 

Halve the squash lengthwise and scoop out seeds. Cut into half moons or quarter moons. Coat with oil and season with salt and pepper, bake for 25 minutes until golden. Meanwhile cook your grain and cool. 

Rip the kale into small pieces and massage with a pinch of salt. Then combine the cooked delicata, kale, and farro  in a large bowl. Season to taste with a dash of apple cider vinegar,  curry, oil and salt & pepper. Serve slightly warm or cold the next day.
