Harissa Spiced Cauliflower & Squash Lettuce Cups

Preheat oven to 400 F 

What you need:

  • 1 head of cauliflower
  • 1 small winter squash or half of large
  • 1 butterhead lettuce head
  • ½ tsp harissa spice blend or paprika
  • Salt & Pepper
  • Oil for tasting
  • Peanuts for serving

Chop the cauliflower and squash into small pieces. Toss with oil and harissa, season with salt  & pepper. If you don’t have harissa spice then you can substitute paprika! Spread into one layer on a baking sheet. Bake for 25-30 minutes until tender. Let cool slightly. 

Meanwhile, rinse the head of butterhead lettuce and let drain. Remove each individual leaf to create your cups! Make sure there is no dirt left lingering on the leaves. Place on a platter to serve. If you are immedly serving the cups fill them on the platter with the spiced veggie mixture, if not then simply serve the filling in a bowl alongside the cups.

To add a little crunch, top the filled lettuce cups with toasted peanuts. Simply heat a dry pan over medium and toast nuts for a couple minutes until fragrant.
