I love radishes! They are great raw, roasted, in soups, and even braised!
What you need:
- 1 bunch radishes, tops removed (use for pesto)
- ½ cup chicken or veg stock
- ⅓ cup rose or white wine
- 1 tbsp butter
- Lemon juice
- Salt
Clean and half the radishes. Meanwhile bring the stock and wine to a boil, then reduce to a simmer and add a pinch of salt. Add the radishes. Cook for about 5-7 minutes, until radishes are tender. Add butter and lemon juice. Serve warm.
I also like to put these in my lunch box in a salad!
