Purple Sprouting Broccoli

This hardy vegetable grows slowly and can last in temperatures a low as -12 degrees F! It’s like a less bitter broccoli rabe. Best way to prepare is to blanch until tender and quickly saute with oil and garlic!

Sprouting Broccoli & Sausage

What you need:

  • A handful of Sprouting Broccoli
  • 1 chicken or pork sausage, 4 oz
  • Half a Lemon
  • Salt & Pepper
  • Red Pepper Flakes, optional

Apparently there’s a famous Philly sandwich that has broccoli Rabe and sausage on it…so this is my side dish version. (I haven’t had this sandwich yet. )

Bring a large pot of water to a boil. Cut the sprouting broccoli into 6 inch length pieces. Then slice each piece in half lengthwise. Balch the broccoli in the boiling water by cooking for about 4 minutes until tender.

Meanwhile, cook the sausage in a pan. Take it out of the casign first, so you get crumbles. Throw in some sliced onion in too if that feels right. Transfer the broccoli into the pan with the sausage. Season with salt & peppers. Add a dash of lemon juice. Saute until it’s cooked to your liking. Serve warm!
