You can simply roast the potatoes. However, if you want them to become like bite sized pillows, don’t skip the first step. It’s a completely different experience.
What you need:
- 1-2 medium sweet potatoes, or 1 huge one
- 3 tbsp oil
- 1 tbsp Vermont Maple blend, or your favorite spices (you can go sweet or savory)
- 1/4 yogurt or mayo
- 2 tbsp honey mustard
- 1 tbsp maple syrup (optional)
- Salt & Pepper
You can simply roast the sweet potatoes, but if you have an extra 10 minutes, try par boiling them first. It’s amazing!
Preheat oven to 425 F
Peel and slice the sweet potato into 1/2 slices, and then half moons. Boil in water for 10 minutes, until tender but not falling apart.
Toss potatoes in oil and spices. If you haven’t tried the vermont maple blend, check it out! It has maple sugar, mustard, sugar, sea salt, white peppercorn, garlic, cumin, coriander, hungarian sweet paprika, and chipotle chile. A little sweet heat for you!
Bake potatoes for 15 minutes, then flip and bake for another 10-15. Until nice and crispy.
Make the dipping sauce by combining the yogurt or mayo, mustard, and salt & pepper. If you want it to be sweeter add the maple syrup.
