Sunchoke Slaw

Why do I keep putting sweet sunchokes with bitter lettuces? Because they balance each other out. Add in apples or pears and top with your favorite nuts!

What you need:

  • 1/2 cup sunchoke, about a 1/4 pound
  • 1 apple or pear, or both
  • Radicchio or other bitter lettuce
  • Juice of half a lemon
  • Sunflower oil, or your preference (Sunchokes are related to sunflowers, so they pair nicely together)
  • Salt & Pepper
  • Nuts, I’m using Butter Toffee pecans from Sweet Legacy

Note: You eat the sunchoke skin. Simply wash and remove any dirt. if you try to peel them, you will not like sunchokes! (Right, Johnny?)

Slice the sunchokes into 1/4 inch thick pieces. Now cut them again to make sticks, or matchstick. (Think baby french fries.) Do the same with the apple and/or pear. Slice the bitter lettuce into thin strips.

Make the vinaigrette by combining the oil, lemon juice, salt & pepper. Toss the slaw with the vinaigrette. Serve topped with your favorite nuts!
