What does kohlrabi taste like? It has a mild, buttery taste (and texture) similar to cauliflower or sweet radishes. Use it in stews, with potatoes for mash, or in a fun, easy recipe like this one!
What you need:
- 1 large kohlrabi
- 4 oz of camembert (or any cheese you want)
- 4 oz of cheddar (or any cheese you want)
- 1 tsp of mustard
- 2 strips of bacon (cut in to small pieces)
Bring a pot of water to a boil. Remove leaves and peel the kohlrabi. Cut the kohlrabi in half and par boil it (for small kohlrabis, just par boil whole). Cook for about 15-20 minutes until tender, but not soft. You should be able to pierce with a knife.
Spoon out a hole in the middle of each half, which you will stuff with cheese. Use your favorite cheese, preferably one that gets gooey when heated. I’m using camembert & mustard for one half and cheddar and bacon for the other half.
Add a nice chunk of cheese into the middle of each hole you’ve dug out. Top with a spread or other yummies.
Bake at 350F for about 20 minutes, until cheese is melted and browned. Serve warm.
