A zesty twist on a kitchen staple.
What you need:
- 1 shallot, finely diced
- zest of one Meyer lemon
- 2 tbsp Meyer lemon juice
- salt
- 1/4 c oil (olive or sunflower)
- 1 tsp dijon mustard, optional
Whisk the shallot, lemon juice and zest, and salt together. Let sit for 10 minutes (this is where the magic happens and the shallot’s sharpness is mellowed).
Now, whisk in the oil and mustard.
