Sweet Potato & Apple Hash

This is my weekday go-to breakfast. You can play around with the ingredients and add things you like to it!

What you need:

  • 1 cup of sweet potato diced (usually half of one)
  • 1/2 cup onion diced
  • 2 slices of bacon cut in small pieces (optional)
  • 1 apple diced
  • pinch of rosemary or curry
  • a “glug” oil (basically almost 1 tbsp)
  • salt & pepper to taste
  • Fried egg (optional)

Dice the sweet potato and onion. Heat the oil in a saute pan and add the sweet potato. Cook for 5 mins. Add bacon and cook for 2 mins followed after with the onion, cooking for an additional 2 mins.

Add apple, rosemary and salt & pepper. Cook for another 3 mins. Fry egg and serve on top.
