Another delicious recipe featuring one of my most favorite veggies…Kalettes! I’ve been making a lot of roasted dishes lately, so I thought I’d mix it up a bit. You can substitute in Brussel sprouts or another leafy green for this recipe.
What you need:
- 1 cup shaved kalettes, raw
- 1 cup rainbow chard, sliced into ribbons
- 2 tbsp oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- pinch of cinnamon and cumin
- dash of red pepper flakes
- salt & pepper
Massage the kalettes and chard together with a pinch of salt, like you would with kale for a salad. Let sit for 20 minutes. Then toss with vinaigrette (see recipe below). You could also add apples sliced in matchsticks at the end for a little sweetness.
Spiced Apple & Honey Vinaigrette – Whisk the honey, apple cider vinegar and spices together (this helps to dissolve the honey). Then whisk in the oil til combined.
