Pan Roasted Watermelon Radish with Vinegar

This recipe is an accident. My mother thought she was roasting turnips with her Sunday roast, but they ended up being watermelon radishes! This is a quick way to have the sweet and sour roasted radishes.

What you need:

  • 2-3 watermelon radishes
  • 2 garlic cloves, smashed and optional
  • Dash of White Wine or Apple Cider Vinegar
  • 3 Tbsp Butter
  • Olive Oil
  • Salt + Pepper

Cut radishes into wedges or cubes.  Heat a glug of oil in pan over medium high heat. Add the garlic and radishes. Radishes are tender. 

Add the butter and vinegar to the pan to coat radishes. Season to taste! Serve warm.

I like adding fresh herbs like thyme or a au za’atar seasoning blend for variety.
