Spinach Frittata Cups with Goat Cheese & Spring Garlic

This is a great way to meal prep for the week. Add one of these frittata cups on top of a salad, in a sandwich, or on its own as a power snack!

What you need:

  • About 3 cups fresh spinach leaves
  • 2 spring garlic stalks, chopped, or 1 onion
  • 8 eggs
  • ½ cup yogurt or milk
  • Oil, Salt & pepper
  • Crumbled goat cheese

Preheat oven to 350° F.

Grease a muffin tin tray. Sautee spinach and garlic until half the volume. Meanwhile, whisk the rest of the ingredients, except cheese, together. Divide the spinach between 6-8 muffin cups, pour in egg mixture, and top with a bit of cheese. Bake for about 15-20 minutes until set. 

Let cool in tins for about 5 minutes before trying to release them! Serve warm or chilled over greens, in a sandwich, or as an on the go snack.
