I love brunch…at home. I would much rather be in my jammies dancing in the kitchen with Gabriel than go out to have someone make me french toast. This is the perfect dish to make with loved ones and enjoy a lazy morning eating.
Makes 2 sandwiches. Half the recipe for one.
What you need:
- 1/4 cup peanut butter or almond butter (our chocolate almond butter would be amazing!)
- 2 bananas
- 4 slices of sandwich bread
- 2 eggs
- A splash of milk, your preference
- Oil or butter
- Salt
- Autumn Harvest Blend
- Syrup for serving
Whisk together eggs with a splash of milk, a pinch of salt and autumn harvest blend. Generously coat both sides of one bread slice in the egg mixture, and set aside. Spread peanut butter on one side of the next slice and place banana slices on top of butter, and coat the other side in the egg mixture. Sandwich this piece of bread onto the other slice, so that the peanut butter is in the middle. Repeat process for the next sandwich.
Heat oil or butter in a nonstick pan over medium high heat. Cook each sandwich about 3 minutes a side, until golden brown. Caramelize extra slices of banana alongside the sandwiches. Serve warm with syrup if you like and the extra banana pieces.
