This is a rustic savory pie. You don’t need anything special to make this, and it’s a total show stopper. Use whatever radishes you’d like, and whatever seasoning is your thing!
What you need:
- Pastry crust recipe (Click HERE for my easy-to-make crust recipe!)
- 4 oz. goat cheese, room temp
- 1 spring garlic or 2 garlic cloves
- Za’atar Seasoning or fresh thyme
- Sesame seeds, optional
- Salt & Pepper
- Dash of apple cider vinegar
- 3 – 4 watermelon radishes, sliced
Preheat oven to 375° F
Dice the garlic and add to goat cheese with salt and pepper, set aside. Toss radish slices with a pinch of za’atar seasoning and apple cider vinegar, set aside. On a floured surface roll out the pastry crust until about 12 inches wide…it does not have to be a perfect circle! Spread the goat cheese on the crust and leave 2 inches of space around the edges.
Place the radish slices on top of the cheese, in a pretty pattern. Fold the excess crust over the radishes and pinch to seal around the sides. You can sprinkle more za’atar or sesame seeds on the outer crust. Place on a baking sheet lined with parchment.
Bake for about 35-45 minutes, until the crust is golden and firm. Let cool and serve warm or at room temp.
