Fried Farro with Mushrooms & Pickled Radish

This is a play on one of my go-to dishes: Fried Rice. Farro has such a wonderful nutty flavor and it pairs really well with mushrooms and greens. Having cooked farro ready to go makes this dish whip up in a flash!

What you need:

  • 1 cup cooked farro
  • Handful of mushrooms
  • 1/2 an onion
  • 1/2 a radish
  • Handful of spinach, chopped
  • Oil
  • Rice vinegar
  • Salt & Pepper
  • Garden Citrus Blend, or thyme
  • Optional: Fried egg on top

Heat a glug of oil or butter in a pan over medium high. Cook the mushrooms and onion with a pinch of garden citrus blend until mushrooms are golden brown. Then throw in the farro and season. You may add a bit more oil to the pan.

Meanwhile slice the radish into small matchsticks: slice into rounds, then cut into fries or matchsticks. Toss with a dash of vinegar, salt, and pepper. Set aside to quickly pickle. Once the farro begins to brown add in the spinach and radish, cook till greens are wilted. Cook undisturbed for 2 minutes to get a nice crisp on the bottom of the pan.

Serve warm, add a fried egg on top for more protein!
