“All The Greens” Salad with Marmalade Vinaigrette

This time of year we are blessed with so many different greens and leaves to create our salads! Mix together different colors, textures, and flavors to create a salad that changes every time. You can use any combination of greens that you want, this week I’m using young kale, spinach, and spicy lettuces. 

Use two handfuls of mixed lettuce for each serving and then dress with the correct amount of the vinaigrette.

Marmalade Vinaigrette (makes enough for 4 servings)

What you need:

  • 2 tsp marmalade
  • 1 tbsp lemon juice or vinegar
  • 3 tbsp oil
  • Salt & Pepper

Whisk marmalade, lemon juice and oil together. Season with salt & pepper.
