Marmalade Vinaigrette

You can swap in any fruit preserve to make this pantry staple. I’m using an apricot orange marmalade.

Whisk together 2 teaspoons marmalade, 1 tablespoon lemon juice or vinegar, 3 tablespoons oil, and season with salt & pepper.
