Sunchoke & Ricotta Pizza

We have pizza night once a week, but it’s usually a Chef Diana zhuzd pizza…topped with mushrooms, greens, or anything laying around. You can use an already made cheese pizza or create a white pizza from the dough up. 

What you need: 

  • 1 pizza crust 12 inch or marg pizza
  • ¾ cup heavy cream 
  • 2 garlic cloves
  • ½ cup ricotta cheese
  • 4-6 oz mozzarella cheese
  • Garden citrus blend
  • Handful of sunchokes, thinly sliced
  • Handful of young kale

Preheat the oven to about 400 F/ 425 F

(If using a margarita pizza, add the sunchokes on the pizza after baking along with the kale greens.)

In a pan over medium high, saute the sunchoke in oil till they begin to become golden. With an immersion blender, whip the cream and garlic together. The spread on the crust or fresh dough. Add a few dollops of ricotta around the crust and sprinkle the mozzarella cheese around.

Top with the sunchokes and spices. Bake for about 8 minutes until cheese is bubbly. Then add the kale greens on top and serve hot!
