Sunchokes, or Jerusalem Artichokes, are a tuber related to the sunflower. They are roots and look a lot like ginger. They are slightly sweet and have a lower glycemic index than potatoes, so they make a great swap! Use the raw or cooked, crispy baked or soft in a soup.
How to Store:
Keep in a bag in your crisper drawer. they should stay firm for over a week in a paper or plastic bag.
How to Clean:
You can eat the skins, and I recommend doing so because it would be a real pain to peel! Simply scrub any dirt with a brush under cold water.
