This may seem like an odd combo, but it’s sophisticated and delicious! I had this one spring day with my friend Marcia…and it’s stuck with me ever since. You can of course omit the berries, but you will be missing out on something special. I will be making this for our Sunday brunch this week!
What you need:
- 3 eggs
- a dash of water or cream
- salt & pepper
- ⅓ cup strawberries, sliced
- drizzle of honey or dash of vinegar
- goat cheese or brie/camembert
- butter
Beat the eggs and liquid until combined and season with salt & pepper. Drizzle a bit of honey over the berries or a dash of vinegar, whichever you prefer.
Make the omelette the classic French way or your preferred method.
How I make an omelette: Heat some butter in a small non-stick pan over medium heat, and swirl around the side. Add the egg mixture and use a spatula to move the egg around. You want curdles like with scrambled egg. Then once the doneness is almost to your liking, let it form one layer. Fold one third over the middle, and sprinkle the cheese and strawberries and then flip the other side over. Roll out of the pan onto your plate. It may take a few tries to perfect this method!
