This is my favorite way to enjoy cucumber when it’s hot out! If you don’t have rice vinegar swap in white wine vinegar.
What you need:
- Cucumber
- Onion, optional
- Rice wine vinegar or white wine vinegar
- Salt
- Spice, I’m using au za’atar
Slice your cucumber as thin as possible along with your onion. Doss with a glug of vinegar and salt to taste. Let sit for 10 minutes. Serve cold!
