I love a quick pickled cucumber…adding soy sauce gives it a nice edge.
What you need:
-1 large cucumbers, or 2-3 small
-1 ½ Tablespoons Rice Wine Vinegar
-1 pinch of sugar
2 Tablespoons sunflower oil
-1 large dash of soy sauce
-1 garlic clove, made into paste
-¼ cup onion, thinly sliced
– ½ tsp minced fresh ginger, optional
Whisk all the ingredients, expect the cucumber, in a bowl. Then thinly slice the cucumbers and put in marinade. Toss to coat and let sit for 10 minutes.
Serve chilled or room temperature!
