You can really stuff peppers with anything you have in your fridge. Have leftover rice, add it into the mix? Have tomatoes or summer squash? Go wild and add them to this recipe too!
What you need:
-2 bell peppers
-Half an onion
– 2 ears of corn, kernels cut off
-4-5 oz of grated cheese
-3 tablespoons of parsley, diced
-Salt & pepper
Heat oven to 375 F
Cut the peppers in half lengthwise, leaving the steam intact. Then mix the rest of the ingredients together. Stuff peppers with the corn mixture. Bake for about 25-30 minutes, until the cheese is melted. You can also add some cheese on the top of the filling before baking too!
